In celebration of Pumpkin Day, why not stop by your local farmers market, fall festival, farm stand or favorite grocery store to pick out one or more pumpkins.  The flesh of the pumpkin is great for roasting, baking or even as soup. Do not forget to wash off the pumpkin seeds, dry them, and brush with a thin coating of olive oil and roast on a baking sheet for about 10 minutes.  The seeds are loaded with fiber, zinc, magnesium and protein.  Enjoy a handful while carving out your fall pumpkin. The flesh of the pumpkin is packed with an important antioxidant known as beta-carotene, as well as, potassium and zinc. Antioxidants help support a healthy immune system; helping to keep us well.

Pumpkin Day is a great opportunity to add a delicious squash to your diet, whether in the form of a traditional pumpkin pie, or a rich and savory pumpkin soup. Many options prevail, such as pumpkin bread, muffins, or pancakes which are delicious alongside a hot cup of cider or pumpkin spice coffee.  Try being more creative by blending cooked pumpkin into your pasta sauce or adding diced pumpkin to your favorite dish of veggies.  It is that simple!
